S o what are you going to make for dinner that will ravish your little ones as well as being light, healthy and tasty? Kids usually love fruits and a bit of rice doesn't hurt.
Opt for those exotic fruits that are mangoes and you'll get a large consensus
You Need2 Cups cooked rice 3 mangoes, cubed 1/4 cup green onion, chopped 1/4 cup red onion, chopped 1/2 cup finely diced red pepper juice of 1 orange juice of 2 limes How ToMix everything up in a bowl and chill for at least a couple of hours, overnight is better. You could also add some black beans and make a main dish of it.
You love rice, but would like to make it tasty for the kids, try a Mixed rice salad but for the day after
You Need1 cup brown rice, cooked 1 cup white rice, cooked 1/2 cup wild rice, cooked 1 red pepper, chopped 1 can sweetcorn, drained 4 spring onions, chopped How Tofor the dressing: 3 T. ff yogurt mixed with the juice of 1 lemon Allow rices to cool after cooking, then combine with the veggies. Mix in dressing, and allow sit for afew hours, or preferably overnight, to allow flavours to meld. This recipe is very flexible - Other veg could be substituted.
