his classic is always popular at picnics and barbecues and as part of a salad and can be made several hours ahead of time. Your day work was hard, and you're willing to make a quick and healthy recipe. Try this!

You Need


6 eggs
1/4 cup mayonnaise
1/2 teaspoon Dijon-style mustard
Salt and pepper
tablespoon chopped scallions or fresh parsley

To Do


Place the eggs in a saucepan and cover with cold water. Bring to a vigorous simmer over high heat. Remove saucepan from the heat. Cover and let sit for 14 minutes.
Drain the eggs and place under cold running water to cool.
Crack and peel off the shells.
Cut the eggs in half, and use a spoon to carefully remove the yolks and place in a small bowl.
Mash the yolks with a fork, and add the mayonnaise, mustard, and salt and pepper to taste.
Place the yolk mixture back into the egg white halves and scatter the scallions or parsley on top.
(Makes 12 servings)


You can also include any number of spices and herbs: Add about 1/2 teaspoon of cumin, curry powder, or dried basil, thyme, or oregano (or 1 tablespoon if using fresh herbs, chopped) to the yolk mixture. For a festive touch, sprinkle the top of the eggs with sweet paprika.
